Pasta Primavera is supposed to comprise of vegetables harvested around spring time, so this is kinda primavera, but it's delicious regardless. And very delicious.
- Boil spaghetti to package instructions.
- Get a jar of julienned sun dried tomatoes - pour about 1 tbsp oil from the jar into a skillet, then sautee 2 or 3 gloves of minced garlic to light brown.
- Toss into the skillet a mix of sun dried tomatoes, diced red peppers, squash, mushrooms, and yellow onions, then sprinkle in some kalamata olives and a dash of garlic salt and Aleppo pepper. Sautee until the veggies are tender but not squishy.
- Warm up a jar of your favorite pasta sauce on the stove - I add several gloves of minced garlic, along with some finely diced mushrooms and onions. Sprink in some Italian Seasoning and salt to taste.
- Plate the spaghetti with a significan portion of skillet veggies on top, and add a spoonful of pasta sauce to the side!
