Pasta Primavera Kinda!

Pasta Primavera is supposed to comprise of vegetables harvested around spring time, so this is kinda primavera, but it's delicious regardless.  And very delicious.

  1. Boil spaghetti to package instructions.
  2. Get a jar of julienned sun dried tomatoes - pour about 1 tbsp oil from the jar into a skillet, then sautee 2 or 3 gloves of minced garlic to light brown.
  3. Toss into the skillet a mix of sun dried tomatoes, diced red peppers, squash, mushrooms, and yellow onions, then sprinkle in some kalamata olives and a dash of garlic salt and Aleppo pepper.  Sautee until the veggies are tender but not squishy.
  4. Warm up a jar of your favorite pasta sauce on the stove - I add several gloves of minced garlic, along with some finely diced mushrooms and onions.  Sprink in some Italian Seasoning and salt to taste.
  5. Plate the spaghetti with a significan portion of skillet veggies on top, and add a spoonful of pasta sauce to the side!
